3 Elegant {and Easy} Make at Home Dinners- Part 2

The other day, I shared our Date Night Dinner #1.  Chicken Mushroom Alfredo on a Bed of Buttered Spinach.  My daughter named that, by the way :).

Today, I'm going to share Baked Salmon Fillets with Brown Sugared Carrots and Sour Cream Noodles

You'll need:

Salmon:
2 large Salmon fillets
1/2 cup butter
1 large onion, sliced
1 cup mushrooms, chopped
salt and pepper
2 tsp Old Bay seasoning
1 tsp Dill
Heavy Duty Aluminum Foil

Carrots:
1 lb. Baby Carrots
1/4 cup Butter
1/2 cup Brown Sugar
1 T Dill

Noodles:
1 lb bag Egg Noodles
16oz Sour Cream
salt and pepper
1 T green onion, chopped
1 tsp Garlic Powder
1/4 cup Parmesan Cheese, shredded

Ok!  This is so simple, but you need to give yourself enough bake time.  Place each Salmon fillet on a separate sheet of Aluminum Foil.  You want your foil to be large enough to fold over the fillets and seal.  Divide the rest of the ingredients, and put half each on top of your fillets.  Fold the sides of your foil up, and fold over to seal.  Place both fillets in a baking dish, and bake at 350 degrees for 1-1 1/2 hours.

Next, melt butter in a large saucepan. Add carrots, and cover.  Simmer until carrots are tender.  Add brown sugar and dill, and continue simmering until brown sugar is dissolved in butter.

Boil noodles, until desired tenderness.  Drain.  Stir in the remaining ingredients.

  3. My husband is trying to get us to have more fish in our diet, and surprisingly he is willing to learn the cooking on this. I will be sharing your recipe with him :)
